Hi! So sorry that this vlog is late. I am currently in London, and I have had some serious internet, time & time difference problems that prohibited me from getting this video up on time, so please forgive me for that. Alas, the weekly vlog is uploaded 3 days late, but this one is a recipe video for a delicious & healthy Roasted Squash Soup! This soup would be perfect for a Thanksgiving meal starter, OR you could even make it and freeze most of it (because it makes quite a lot), and just defrost & heat for a quick fall lunch! So, without further ado, here is my video:
1 butternut squash
1 golden acorn squash
2 sweet potatoes
2-4 cloves of garlic (depending on how much you like garlic)
vegetable oil for the roasting pan
5-6 cups of water (depending on how thick you like your soup to be)
1.5 tbs kosher salt
2 tsp black pepper
1 tsp onion powder
1 tsp garlic powder (omit if you do not like garlic)
1 tsp sweet paprika
Roast Veg @ 400 degrees F for about 30-35 minutes.
